Baingan Bharta

Baingan Bharta is an Indian dish made of eggplant when cooked whole.
Serves 4
INGREDIENTS
1 large eggplant
Finely cut spring onion - 100 gm
Grated ginger - 12 gm
Freshly ground cumin* - 2.5 gm
Freshly ground coriander* - 2.5 gm
Aamchur (mango powder) - 5 gm
Ghee - 8 gm
* Roast cumin and coriander seeds, and grind them.
PROCESS
Take the stem off and grease the eggplant with ghee.
COOK IN TWO WAYS:
A. You may roast it on a skillet, turning it every few minutes for a total of about 25 minutes.
OR
B. Preheat oven at 450°F, cover the eggplant in foil completely, and cook for 1 hour. Turn it every 15 minutes.
Once tender, peel the eggplant skin and mash the eggplant into a pulp.
In a pan, sauté the ginger in ghee.
Add the eggplant, spring onions, cumin, coriander, and mango powder. Mix the ingredients evenly.
Cover the pan and let simmer for 10 minutes.
