Chickpea Crepes with Carrots, Green Peas, Onions

INGREDIENTS

  • ½ cup sliced carrots

  • ½ cup sliced red onions

  • 1 tbsp coconut oil to cook

  • For the green pea mash

  • 1 cup green peas

  • 2 teaspoon olive oil

  • 2 teaspoon cashew milk

  • 1 tsp crushed walnuts, cashews (nuts of your choice)

  • Squeeze of lemon

  • Water to cook the peas

PROCESS

  1. Cook green peas in water until soft. 

  2. After the peas are cooked, add olive oil, cashew milk, crushed nuts and a squeeze of lemon. You get it to the consistency that’s right for you 

  3. Sautee carrots and red onions in coconut oil.

  4. Then you can spread the pea mash with sauteed carrots and onions on chickpea crepes.
