Sweet Potato Delicacy

Portion for one serving
INGREDIENTS
150g sweet potato 1cm cubed
1/2 cup green onions (scallions) chopped
1/2 tbs coconut oil
Note: Peel the sweet potato until you see the salmon pink color on the inside.
Then cut it in 1cm cubes.
PROCESS
Cook sweet potato in coconut oil at low to medium flame in a pan.
Once the sweet potato is all done, add green onions, and cover the pan on low flame for a minute.
Tip: It's a great combination with some lettuce or spinach as salad.
Optional: Add 1/4 cup of coconut milk toward the end of your cooking to give it some gravy and eat it with a side of rice.
