Chickpeas and Shiitake Mushrooms

INGREDIENTS

  • 1 cup: cooked chickpeas

  • 1/2 cup: shiitake mushrooms cut is pieces

  • 1/4 cup: chopped onion

  • 1/4 cup: fine chopped red or green sweet pepper

  • 1 clove: garlic

  • 2-3 tablespoons: olive oil

  • 3 tablespoons: finely fresh chopped cilantro or coriander

PROCESS

  1. Soak the shiitake mushrooms in advance in water with a little bit of salt.

  2. Lightly sauté chopped onions, chopped red or green pepper and garlic.

  3. Add the cooked chickpeas and shiitake mushrooms and cook for 5-6 minutes.

  4. Remove from heat and garnish with chopped coriander.
