Chickpeas and Shiitake Mushrooms

INGREDIENTS
1 cup: cooked chickpeas
1/2 cup: shiitake mushrooms cut is pieces
1/4 cup: chopped onion
1/4 cup: fine chopped red or green sweet pepper
1 clove: garlic
2-3 tablespoons: olive oil
3 tablespoons: finely fresh chopped cilantro or coriander
PROCESS
Soak the shiitake mushrooms in advance in water with a little bit of salt.
Lightly sauté chopped onions, chopped red or green pepper and garlic.
Add the cooked chickpeas and shiitake mushrooms and cook for 5-6 minutes.
Remove from heat and garnish with chopped coriander.
