Thai Coconut Soup

INGREDIENTS
1 quart chicken broth
1 1/2 cup coconut milk
1 tsp freshly grated ginger
Juice of 1 lemon
1-2 cup pulled cooked chicken
1-2 green onions, chopped
chopped cilantro
PROCESS
Bring the stock to a boil, skim any foam that rises to the top
Add coconut milk, lemon juice, ginger, and chicken.
Simmer for about 15 minutes.
Ladle into soup bowls or mugs and garnish with cilantro and green onions.
*Note:
The quantity of ingredients mentioned in the recipes are usually adult doses which may be modified for children accordingly.
You could blend the mix if your child can’t chew and swallow well.
